Westfield State University Dining to Enter YMCA of Greater Westfield's Chili, Chowder and Chocolate Cook-Off
The Westfield State University Dining Services will be featuring three items in the YMCA of Greater Westfield’s Chili, Chowder and Chocolate Cook-Off to highlight the use of local and sustainable foods.
The cook-off will take place on Saturday, March 3, 11:30 a.m.–1:30 p.m. at the Westfield YMCA GP room. Tickets are $8 in advance and $10 at the door. This year, the fundraising will benefit the LiveStrong YMCA program; a free 12-week exercise program for cancer survivors who are currently in or have completed treatment and are physically deconditioned.
The three dishes to be entered by Westfield State University Dining Services include:
Denver Red Eye Chili – Features sustainably-raised beef. The recipe includes coffee from Sun Coffee Roasters (a fair-trader roaster based just over the border in Connecticut) and will be served with cornbread made with local cornmeal (Four Star Farms, Northfield).
Foggy Day Fish Chowder – Features fresh fish from Red’s Best in Boston. Red’s buys from small independently-owned boats and the University receives its fish less than 24 hours after it’s been caught. The milk and cream come from Highlawn Farms in Lee.
Dark Chocolate Ganache Torte – Uses flour from Four Star Farms as well as free-range eggs and local butter.
“Each item has been selected to show off our in-house culinary talent and highlight some of our incredible local suppliers.” says Mary Reilly, executive chef of Dining Services at Westfield State University.
“According to our annual student survey report, humanely raised and locally sourced foods are the most important attributes of a student’s dining experience at Westfield State University,” said Andrew Mankus, director of Dining Services. “More than 20 percent of our ingredients are sourced from the local and New England regions. We are proud to partner with over 30 local farms including Hinckley Harvest, High Lawn Farms, Diemand Family Farm and Kitchen Garden Farms.”
